Ingredients

For the Filling

  • 24 readymade puri shells (same as Pani Puri)
  • 2 medium potatoes, boiled and roughly mashed (Potato White 2kg )
  • ½ tsp chaat masala (Shan Chat Masala 100g )
  • ¼ tsp red chilli powder (TFS Red Chilli Powder 100g)
  • 1 tbsp fresh coriander, chopped
  • Pinch of salt

For the Chickpeas

  • 1 tin chickpeas, drained (KTC Chickpeas 400g)
  • ¼ tsp chaat masala, pinch of salt, squeeze of lemon

For the Sweetened Yogurt

  • 300g thick natural yogurt, cold (Desi Natural Yogurt 1kg )
  • 1 tbsp sugar
  • Pinch of salt
  • ¼ tsp roasted cumin powder (toast + crush Fudco Cumin Seeds)

Step-by-Step Assembly

Take 24 readymade puri shells (the same shells from our Pani Puri recipe). Gently tap a hole in the top of each. Fill each shell with 1 teaspoon of mashed potato (boiled, mashed with ½ teaspoon chaat masala - Shan Chat Masala 100g - and a pinch of salt). Add a few boiled chickpeas (KTC Chickpeas 400g - drained). Top each with 1 tablespoon of thick yogurt (Desi Natural Yogurt 1kg - cold). Drizzle tamarind chutney (Rishta Tamarind Date Chutney 400g) and green chutney (Sagar Coriander Chutney 200g) over each puri. Sprinkle chaat masala. Top with a pinch of sev (Haldirams Bhujia Sev 200g). Scatter chopped coriander (Fresh Coriander Bunch). Serve immediately - the shells soften within 5 minutes of assembly.
